from Galen's dad PIZZA SAUCE put 15 oz can tomato sauce in sauce pan and add: oregano (2/3-1 Tbs) basil (1 tsp) one bay leaf - crushed garlic (3 cloves crushed in garlic press) pinch of salt pinch of pepper about a tsp of balsamic vinegar 1/2 tsp sugar can also add parmesan cheese let simmer at very low heat for 1-2 hr - stir often DOUGH to a large bowl add: 8 oz very warm water (but not hot -if too hot will kill the yeast) add 1 tsp sugar- stir add one package of Fleischmann's yeast (not rapid rising) make sure all dissolved let sit for about 10 min during this 10 min warm oven - to about 200 then turn off also melt a tbs spoon of butter and let cool when yeast looks all foamy - add the butter (not too hot - don't want to kill the yeast) and a pinch of salt add flour 1/2 cup at a time to yeast/water - stir when firm enough to pick up (after about 2 cups of flour - put flour on hands - keep dough from sticking) - place on clean counter top that has been pre-floured - kneed dough - 5 min? - sprinkling additional dough as needed (2.5-3 cups total)- when firm (and not sticky) put back into a bowl greased with a little butter - I use the same bowl after I've cleaned it - letting it stand the dough hardens making it really difficult to clean later - place dampened cloth over bowl and put in warm place - like your oven that is warm but turned off - let dough rise 30-45 min during this time grate 16 oz mozzarella cheese and cut whatever - green peppers and mushrooms etc - may want to pre-cook veggies to get rid of excess water remove dough - heat oven to 425 - place dough on a pizza stone pre-sprinkled with corn meal (keeps dough from sticking) -spread sauce - add layer of cheese - add toppings - add more cheese - sprinkle parmesan cheese if desired - bake for 20-25 min until cheese and crust are browned.
